2 cups veggies of your choice (I put sweet corn, peas, sliced shallots, chopped red bell pepper, grated potatoes)
1 ½ cups all purpose flour
½ cup ground oats
3 tsp baking powder
1 tsp salt
½ cup grated cheddar cheese
½ cup milk
½ cup yogurt
60 gm melted butter
1 egg (for eggless version see Tips below)
Fresh or dried herbs of your choice ( I put dried basil, chilli flakes, garlic powder, mixed herbs, pepper)
Procedure:
Mix the flour, oats, baking powder, salt, herbs and cheese in a bowl. Now add the veggies and mix with a spoon so that all the veggies are properly coated with the flour
In a separate bowl whisk the egg first. Then add the milk, yogurt and butter and whisk well
Create a well in middle of flour mixture and pour the liquid mixture. Then fold in the mixture well with a spoon and stir till the ingredients have combined well. Do not over mix otherwise the muffins will become tough
Meanwhile pre-heat the oven to 180 deg for 10 min. Grease your muffin pans and pour the mixture in. Bake for 25 30 min. Check with a toothpick that it comes clean and your done
Some Tips:
You can skip the egg and add Όth cup yogurt more
Or you can skip yogurt and use 3 eggs instead of 1. I was running short of eggs so substituted with yogurt
Other veggies you can add are grated carrots/ zucchini, spinach etc
You can skip oats and use flour only or change proportion of oats and flour to your desir
