Veggie And Cheese Muffins

Ingredients: 
• 2 cups veggies of your choice (I put sweet corn, peas, sliced shallots, chopped red bell pepper, grated potatoes) • 1 ½ cups all purpose flour • ½ cup ground oats • 3 tsp baking powder • 1 tsp salt • ½ cup grated cheddar cheese • ½ cup milk • ½ cup yogurt • 60 gm melted butter • 1 egg (for eggless version see “Tips” below) • Fresh or dried herbs of your choice ( I put dried basil, chilli flakes, garlic powder, mixed herbs, pepper)
Procedure: 
• Mix the flour, oats, baking powder, salt, herbs and cheese in a bowl. Now add the veggies and mix with a spoon so that all the veggies are properly coated with the flour • In a separate bowl whisk the egg first. Then add the milk, yogurt and butter and whisk well • Create a well in middle of flour mixture and pour the liquid mixture. Then fold in the mixture well with a spoon and stir till the ingredients have combined well. Do not over mix otherwise the muffins will become tough • Meanwhile pre-heat the oven to 180 deg for 10 min. Grease your muffin pans and pour the mixture in. Bake for 25 – 30 min. Check with a toothpick that it comes clean and your done Some Tips: • You can skip the egg and add Όth cup yogurt more • Or you can skip yogurt and use 3 eggs instead of 1. I was running short of eggs so substituted with yogurt • Other veggies you can add are grated carrots/ zucchini, spinach etc • You can skip oats and use flour only or change proportion of oats and flour to your desir
